These cabinets provide a simple, easy to installation and operation solution to fresh meat maturation and seasoning.
When using the Classic Meat Store Ageing cabinet for red meat, the temperature should be set +1 to +3 degrees where it is consistently temperature controlled by the energy efficient system
With the option of a high or low humidity, for best results we recommend the controller is set to high humidity which is managed between 75% to 85% through the evaporator and airflow.

Dry Ageing Rooms
As specialists in providing temperature and humidity-controlled food production refrigeration equipment, Everlasting have designed a series of modular Dry Ageing Rooms designed for small to large scale drying and storage.
These modular dry ageing rooms are available in a variety of widths, depths and heights and can be supplied with or without an integral floor and double-glazed glass door and window panels.
Rooms start at 1300mm x 1500mm and go up to 3500mm x 3700mm and are supplied with either a monobloc or split system and with glass door and window panels these systems are ideal for meat storage both front of house or behind the scenes.
Using the A.I Guidovie Meat Frame Hanging and Storage System we are able to supply meat hooks and shelving to compliment these and other dry ageing rooms.

We recommend that only red meats should be stored together in all options, this avoids the wrong type of bacteria being introduced to the storage area.
These free-standing meat ageing cabinets allow butchers, chefs and food producers to keep beef & lamb separate from other meats.
The moisture, fat and bacteria from other meats especially pork and poultry can often cause red meats to become sticky and develop unwanted mould.
